The egg and bacon roll is a great Aussie classic, perfect for breakfast or lunch on-the-go. Here, we’ll tell you the secret on how to create a cafe-style breakfast staple at home in a few easy steps.

It’s such an easy meal to whip up, all you need is 5 ingredients!

Ingredients:
1 Round Brioche Burger Roll

2 Rashers of Short-Cut Bacon

1 Egg

2 tbs of Drunken Sailor Smokey Tomato Relish

15g Baby Spinach Leaves (optional)

Method

  1. Preheat your oven to 180C.
  2. Heat your non stick frying pan over medium-high heat. Add your rashers of bacon and fry until they become golden and cooked to your liking. 
  3. Cut your burger roll in half and place both halves into the oven for no longer than 5 minutes to help them crisp up.
  4. Remove bacon from the pan and set it aside (you can even pop it in the oven to stay warm). Reduce the heat to medium. Add a splash of oil to the same pan, then add your egg. 
  5. Fry your egg for about 1-2 minutes, ensuring the whites are cooked, but yolk is still runny. Remove from the heat.
  6. Remove your roll from the oven and butter both sides, then spread Smokey Tomato Relish across the base. Top with spinach leaves, bacon and egg. Place on the bread roll top. Serve immediately.

NOTES
Egg burning on the bottom, but whites are still raw? Pop a couple of tablespoons of water into the pan and cover with a lid! This way, the top of the egg will be ‘poached’ and will cook much quicker. To test if your whites are cooked, jiggle the pan a little. If the whites wobble, they need a little bit longer.
